Ingredients & How to Make Vietnamese Beef Pho

Beef Pho

Ingredients: 3 lbs oxtails // 2 gallons water //4 inches ginger // 2 onions // ½ cup fish sauce // 10 whole star anise // 5 whole cloves // 1 cinnamon stick // ½ teaspoon fennel seed // 2 tablespoons salt // 4 bay leaves // 1 bunch scallion, sliced // 1 bunch cilantro // 1 bunch basil leaves // 1 bunch mint leaf // 1 thinly sliced onion // 4 cups bean sprouts // 2 limes, cut into wedges // 1 lb filet mignon, sliced very thinly // hoison sauce // sriracha sauce

Directions: Place the oxtails in large stockpot and add water. Bring water to boil and reduce heat to simmer. Scrape any scum off top of water. Cut onion in half and place on a baking sheet along with ginger to broil in oven for 20 minutes. Turn over halfway through and allow to cool. Place the star anise, cloves, cinnamon and fennel seeds in a piece of cheesecloth to tie shut with twine. Add the spice pack, onion, ginger, bay leaves, salt and fish sauce to broth. Remove spice pack, onions, ginger, bay leaves and discard. Remove oxtails and set aside. Remove meat and trim fat. Set aside the meet and return the bones to broth. Allow broth to simmer for 1-2 hours until you achieve the desired taste. Remove the bones and adjust the salt to your liking. Soak the rice noodles in COLD water for 15-20 minutes and start a large pot of boiling water. While noodles are soaking, place cilantro, basil leaves, mint leaves, sliced onions, sliced scallions and bean sprouts on a serving platter. After noodles have soaked, place them in boiling water and cook until tender (2-3 minutes). Rinse noodle in cold water if not serving immediately. When ready to eat, place noodles in a serving bowl and arrange the sliced meat over them. Ladle the boiling broth over the noodles and beef, covering the meat. Serve next to the garnishes as well as hoison sauce and sriracha.
